So, Veronica, what’s behind this year’s unconventional Christmas menu?
This year, we’re really stepping away from the norm. We wanted to focus on the best seasonal ingredients, but with a twist. We’re taking familiar holiday elements and reimagining them—think unexpected pairings and bold flavors, Veronica tells us.
How interesting and exciting. Could you name a few examples of what to expect?
For example, salmon with aquavit in our starter—it’s not something you traditionally see on a Christmas menu, but it brings a warming, festive touch that really stands out. We prepare the salmon by infusing it in aquavit for three days. This gives it a unique flavor and opens up your taste buds before you experience the main course and dessert.
Then, there’s our braised pork belly, rich and tender, paired with a sweet pumpkin-apricot purée and crispy ‘pork popcorn.
And for dessert, our Christmas bauble—white chocolate mousse with a hint of spice, topped with cherry coulis and gløgg gel. It’s all about surprising our guests while keeping that cozy, seasonal spirit.
It sounds like the perfect blend of tradition with a twist. Is there any other special experience to look forward to this December?
Definitely! Until the 31st of December, we’re offering our Christmas Afternoon Tea—a new take on the classic tradition, with all the seasonal flavors you can imagine. It’s a wonderful way to relax and enjoy, whether you’re with family, friends, or colleagues. It’s an experience that’s as much about the ambiance and presentation as it is about the flavors.

For us, the holidays are all about giving guests a memorable experience, Veronica tells us. It’s not just about the food—it’s the atmosphere, the details, and the thought we put into every aspect of the experience. Whether it’s a festive afternoon tea, a celebratory dinner, or a family gathering, we want to make sure that each visit feels special. And with our upcoming renovation, there’s a sense of anticipation that makes this Christmas even more unique.
