A seasonal twist

Christmas is approaching and on that occasion, we had a chat with Veronica, our talented Restaurant and Bar Manager, to find out what THIEF Restaurant has to offer this season. Say goodbye to the usual Christmas classics and get ready for a journey through unexpected flavors and the season's best ingredients.

So, Veronica, what lies behind this year's unconventional Christmas menu?

– This year we are really moving away from the ordinary Christmas food. We wanted to focus on the best seasonal ingredients, but with a twist. We include familiar Christmas elements and add a new twist—think unexpected combinations and bold flavors, Veronica explains.

So exciting! Can you give us some examples of what we can expect?

– For example, we start with salmon and aquavit—not something you would usually find on a Christmas menu, but it gives a warming, festive touch that stands out. In this starter, we prepare the salmon by allowing it to 'bathe' in aquavit for three days. This gives a unique flavor and helps you awaken your taste buds before trying the main course and dessert.
In our main course, we have braised pork ribs that are rich and tender, served with a sweet pumpkin and apricot puree and crispy 'pork popcorn'.

For dessert, you can look forward to our Christmas ball—white chocolate mousse with a hint of spice, topped with cherry sauce and mulled wine jelly. It's about surprising our guests while maintaining the cozy, seasonal atmosphere.
