A briny, clean dish that evokes the clarity of the fjord. Served cool and bright with acidic and herbal tones.

FOREST | Beef Tartare
Norwegian beef | juniper cured yolk gel | pickled ramson | horseradish cream | seeded crisps (Lactose, eggs)

Deep, earthy, and wild, this tartare channels the Norwegian forest, with ramson (wild garlic) and cured yolk gel recalling the flavors of mossy ground and pine.

White asparagus | summer truffles |brown butter beurre blanc | toasted hazelnuts | lemon and chervil(Milk, hazelnuts)

An homage to Norway’s short but rich growing season. Subtle, creamy, and nutty with earthy truffle notes, a refined expression of the cultivated field.
